Grapes: Syrah, Grenache & Carignan
After the manual harvest of the grapes at the ideal stage of phenolic maturity, pre-fermentation maceration at low temperatures is carried out in stainless steel vats with regular pumping over. Maceration takes place during 15 to 21 days with a gentle extraction process. The maturing is carried out in vats on fine lees for 8 months. Sulphur is added as little as possible during maturation and bottling.
The fruit of a very promising vintage for the Roussillon region, Les Sorcières 2017 has a very beautiful fruity profile and is very fresh with aromas of black fruit. On the palate, the explosively fruity palate displays a deliciously silky and gourmet texture.
